Oops!

I had this post written out to post last Wednesday and I forgot to post it, so here it is.  This was supposed to go before today’s post on Cannes, just so it doesn’t go to waste:

Hi all!

I’ve been feeling super inspired with all these yummy blogs I follow and recipes I see and this was a good week to try everything out. 

After a tough loss this weekend, we started the week with two tough workouts on Monday and Tuesday.  The staff’s plan was to work us really hard this week to prepare for the next few upcoming weeks of travel, but we have the #1 team in the league this weekend.  I love the faster paced circuit workouts but because we don’t do them regularly the team (and I) aren’t used to it.  So this idea didn’t seem to make sense to a lot of us.  Tuesday we were all so wiped, Coach canceled our afternoon practice.  Instead we went and got coffee downtown as a team.  Wednesday was a light day with no workout and at the end of practice Coach said we didn’t have practice AGAIN on Thursday!  So minus workouts we really only practiced volleyball 2 days this week.  A little bit weird for all of us used to training 3 hours a day, but the rest was MUCH needed and we were all very grateful. 

I’ve been trying to cook almost every night and I did pretty well this week.  I made spaghetti squash and meatballs with fresh basil, and baked avocado with egg and bacon.  And this week at the farmer’s market I found real (not frozen) Brussels sprouts so I tried another less seasoned amazing Brussels sprouts with bacon recipe.  The Brussels roasted to this amazing crispiness on the outside.  I’m having roasted butternut squash and chicken for dinner tonight.  I just finished cutting up a butternut squash and there’s currently coconut zucchini bread cooking in the oven.  I cannot wait for it to be done, YUM!  Squash isn’t found to easy here I have found, but it’s one of my favorite things for fall. (Even though it isn’t cold yet!)  And tonight, I learned how much butternut squash sweat while I was trying to peel the skin with a potato peeler. 

I made my first batch of homemade almond milk this week! Using soaked almonds, water, a few dates and a little vanilla and I am HOOKED!  It’s something I suggest you all try, so fresh and yummy.  I’ve been using it for my morning overnight oats and chia pudding.

AND I bought my first bottle of wine! (In France at least haha)  I haven’t ventured into the wine section yet because 1. It is SO big and intimidating and 2. I don’t want to make wine a nightly habit being an athlete, but I had to see what all the fuss was about.  The majority of the bottles here are under 5 Euros, which is just crazy to me!  I am hoping to bring home a few local bottles when I come back for Christmas.  

I also dove into American Horror Story this week (so scary but perfect for Halloween), and I started my first yoga book!  I can’t believe it’s almost the end of October.  While the Chagrinians are getting snow, itwas a balmy 70 today.  I’m just waiting for it to get cold, but I might have to wait till I go home for Christmas.  Speaking of Christmas, I’m taking requests for presents from France!

I’m missing all my family and friends tonight, as the whole crew seems to be traveling from different directions to see my Nebraska teammates play at OSU.  Hugs all around.  I love you guys.

    You are too cute for words, chef. I have a spaghetti squash here, for weeks, and have not been sure how to cook it but yesterday at Trader Joe a sign said, 350 for an hour. Can you tell me how you did yours. The practice schedule sounds a little crazy. I wonder what the coach has in mind; bet you do too.
